Hey y’all! Guess what? I have another delicious summer recipe to share with you. If you’re a feta lover like me, you’re going to be doubly excited as it is one of the main ingredients for this delicious salad! Annnnd it get’s better. With only four ingredients, it won’t break the bank and it requires minimal prep.
I first had this light and refreshing treat earlier this summer when we visited family and friends in Danville, KY. We met up at the annual Great American Brass Band Festival and it was a fun afternoon filled with reminiscing and catching up. (Side note: If you’re ever planning a summer trip to Kentucky, please go and check it out! Brass bands, children’s activities, food, art, dancing and more make this one of the best events of the year.) This dish was one of the most memorable things I ate at our picnic and my friend, Allie, was so kind to share her recipe with me. In addition to being a college friend and former roommate, Allie is a fellow blogger.
Allie’s Watermelon & Feta Salad
One watermelon, chopped into pieces
One small container crumbled feta cheese
Leaves from 3-4 sprigs of mint, chopped
Sea salt to taste
Mix ingredients together and serve!
