Houston is now in full 100 degree mode and it’s hotter than hot! Still, the blazing sun and legendary humidity doesn’t keep Houstonians from enjoying picnics at the zoo, lunch on the covered patio or after work cocktails on the deck. How do they do it? They serve smart dishes that are weather appropriate (skip the mayo) and won’t make you sweat (too spicy). Lena’s Famous Dill Potato Salad with Feta is one of these smart dishes. It’s quite possibly one of the most delicious potato salads I’ve ever had and it’s not even mayo based! The dill and creamy feta with the tang from vinegar and yummy peppers and onions give a normal hum drum potato salad a lot of zip.
We just had dinner with some family friends the other day and they mentioned that they still enjoy a potato salad that my stepmom, Lena, made for Brent’s graduation party a few years ago. I’m so glad they still enjoy it and it reminded me that I needed to share it with y’all ASAP!
2 lbs small red potatoes, unpeeled
1/3 cup red wine vinegar
1/3 cup olive oil
5 tablespoons chopped fresh dill
1 teaspoon salt
1/2 teaspoon pepper
2 large red bell peppers, chopped
1 cucumber, cut in half and sliced
1/2 cup sliced green onions
4-5 oz crumbled feta cheese
1. Bring potatoes and water to a boil and cover.
2. Cook 25 to 30 min.
3. Drain and cool.
4. Cut into quarters.
5. Whisk vinegar, oil, dill, salt, pepper. Pour over warm potatoes.
6. Stir in bell peppers, cucumbers, green onions and feta. Toss to combine.
